Background

This is a simple lacto-fermentation of cherries, using a 2% salt brine. A small amount of water was added to ensure the fruit remained submerged.

Instructions

  1. Combine
    Add the cherries and salt to a jar.

  2. Submerge
    Add just enough water to cover the cherries, then place a weight on top to keep them submerged.

  3. Ferment
    Seal the jar and allow it to ferment at room temperature.

Notes and Observations

  • The resulting ferment is very tasty and has an almost olive-like quality.
  • This raises the question of whether prematurely picked cherries could be cured in a similar manner to olives.
