Background
This is a simple lacto-fermentation of cherries, using a 2% salt brine. A small amount of water was added to ensure the fruit remained submerged.
Recipe
Ingredients
Cherries
Salt (2% of cherry weight)
Water (to cover)
Equipment
Fermentation Jar
Fermentation Weight
Instructions
-
Combine
Add the cherries and salt to a jar. -
Submerge
Add just enough water to cover the cherries, then place a weight on top to keep them submerged. -
Ferment
Seal the jar and allow it to ferment at room temperature.
Notes and Observations
- The resulting ferment is very tasty and has an almost olive-like quality.
- This raises the question of whether prematurely picked cherries could be cured in a similar manner to olives.
