Background

This is a lacto-fermentation of foraged white berries and wine berries. The berries are combined directly with 2% salt by weight, which will draw out their juices to create a brine.

Instructions

  1. Combine
    Add the berries and salt to a bowl and mix to combine.

  2. Pack
    Transfer the mixture to a small mason jar.

  3. Weigh
    Place a fermentation weight on top of the berries to ensure they remain submerged as they release their juices.

Notes and Observations

  • The resulting taste is like a mix between raspberry, cherry, and wine.
  • This would be nice mixed with honey, perhaps in a BBQ-type sauce or on a dessert, like a sorbet.
  • It would be interesting to repeat this process without the salt for more dessert-focused applications or to make a soda.
