This is a lacto-fermentation of foraged white berries and wine berries. The berries are combined directly with 2% salt by weight, which will draw out their juices to create a brine.

Combine
Add the berries and salt to a bowl and mix to combine. -
Pack
Transfer the mixture to a small mason jar. -

Place a fermentation weight on top of the berries to ensure they remain submerged as they release their juices.
