Honey is flower nectar that bees have concentrated and stored, so it is both a sweetener and a record of whatever was blooming around the hive. That makes it especially Northeast-relevant: local honey is not a single flavor but a moving summary of orchards, clover, basswood, berry bloom, goldenrod, buckwheat, and the rest of the regional forage calendar.12

McGee notes that honey was the dominant sweetener in Europe before cane sugar took over, and that its flavor always carries more than sweetness alone. Even a typical honey is slightly tart and savory, while single-source honeys can swing sharply in character; he calls out darker honeys such as buckwheat as especially robust.1 Purdue’s extension notes the same basic point from the consumer side: the United States produces hundreds of distinct honeys, each tied to a floral source.2

Its kitchen behavior comes from composition as much as aroma. Honey is usually around 17 percent water and dominated by fructose and glucose rather than sucrose, which is why it pours like a ready-made syrup, attracts moisture, and browns readily when heated.34 Those traits help explain why it works well in drinks, ferments, glazes, and frozen desserts rather than acting like a direct one-for-one stand-in for dry sugar.

That is the version of honey that appears in this notebook: a floral, fermentable syrup ingredient rather than a neutral sweetener. It shows up plainly in Toasted Wheat & Honey Kombucha, and it would make sense beside the darker, more regionally specific Buckwheat Honey note as the general page that those more particular honeys branch off from.
