Background
This is an experiment to create a fermented soda using the previously made unripe peach cheong. A portion of the cheong is combined with water and an active carrot bug starter. The goal is to ferment the sugars from the cheong to produce a carbonated beverage.

75g Unripe Peach Cheong
50g Carrot Bug starter
400g Water

Instructions

Combine
Add the cheong, starter, and water to the jar. -
Mix
Stir thoroughly to dissolve the cheong syrup. -
Ferment
Seal the jar and leave it at room temperature for 12 to 24 hours.
Notes and Observations
- Given the active starter, this should ferment into a pleasant soda within 24 to 48 hours. The progress will be monitored for signs of carbonation.

- s nicely carbonated. The taste is unique and hard to describe, somewhat like candy and dried fruit. It is somewhat acidic since the cheong lacto-fermented before being added to the soda. In some ways, the taste was reminiscent of suanmeitong (smoked plum drink).
