Unripe Peach Cheong Soda

Background

This is an experiment to create a fermented soda using the previously made unripe peach cheong. A portion of the cheong is combined with water and an active carrot bug starter. The goal is to ferment the sugars from the cheong to produce a carbonated beverage.

75g Unripe Peach Cheong

50g Carrot Bug starter

400g Water

Instructions

  1. Combine
    Add the cheong, starter, and water to the jar.

  2. Mix
    Stir thoroughly to dissolve the cheong syrup.

  3. Ferment
    Seal the jar and leave it at room temperature for 12 to 24 hours.

Notes and Observations

  • Given the active starter, this should ferment into a pleasant soda within 24 to 48 hours. The progress will be monitored for signs of carbonation.

  • s nicely carbonated. The taste is unique and hard to describe, somewhat like candy and dried fruit. It is somewhat acidic since the cheong lacto-fermented before being added to the soda. In some ways, the taste was reminiscent of suanmeitong (smoked plum drink).
