Brassica oleracea var. capitata
Cabbage is a long-keeping Northeast vegetable with a mild, mineral-sweet character. Dense heads give it good storage life after harvest.1

Like other brassicas, cabbage contains glucosinolates: sulfur-rich plant compounds involved in the plant’s chemical defense system.2

Maine Extension lists cabbage as an early spring transplant and a late-summer planting, reflecting its preference for cool conditions.3
