Phaseolus vulgaris
Dry beans are mature, dried seeds valued for their long storage life and rich, creamy texture. Maine-grown types include Yellow Eye, Jacob’s Cattle, Soldier, Navy, Black Turtle, and Vermont Cranberry beans.1

They connect naturally with sweet corn, rye, and leafy greens: a familiar Northeast pattern of grain, bean, and vegetable.

Dry beans, peas, and lentils are the mature seed forms of legumes and are collectively called pulses.2
