Process
Ingredients
- Fresh cranberry beans
- Salt (for boiling water and 2% by weight for the ferment)
- Water
Method
- Boil the fresh cranberry beans for approximately 5 minutes in water with a few percent of salt to remove residual starch.
- Drain the beans and place them into a jar.
- Add water and salt at a ratio of 2% total weight.
Notes and Observations
- Texture: The beans needed to be cooked more thoroughly before going into the jar; the 5-minute boil was insufficient.
