Testing a simple Lacto-Fermentation on fresh cranberry beans.

Process

Ingredients

  • Fresh cranberry beans
  • Salt (for boiling water and 2% by weight for the ferment)
  • Water

Method

  1. Boil the fresh cranberry beans for approximately 5 minutes in water with a few percent of salt to remove residual starch.
  2. Drain the beans and place them into a jar.
  3. Add water and salt at a ratio of 2% total weight.

Notes and Observations

  • Texture: The beans needed to be cooked more thoroughly before going into the jar; the 5-minute boil was insufficient.
