Phaseolus vulgaris
Cranberry bean is a large speckled common bean that can be eaten either as a fresh shell bean or as a dry bean. It makes sense here because the Northeast already grows dry beans seriously enough for UVM to include Vermont Cranberry among the region’s named bean classes, and because the bean’s starchy-but-still-tender shelly stage is exactly the kind of transitional ingredient that invites fermentation experiments.12
McGee points out that fresh shell beans are mature but still moist, so they cook much faster than fully dried beans and taste sweeter as well.2 Cranberry beans are one of his standard examples. That matters in practice: a cranberry bean can behave like a legume and a fresh vegetable at the same time, with enough starch to turn creamy but enough moisture to stay lively if it is handled before it fully dries down.
As a common bean, cranberry bean belongs to the same species that gave rise to an enormous range of seed sizes, colors, and cooking qualities after domestication in the Americas.3 Large-seeded types like cranberry beans became especially established in the American Northeast, which helps explain why they feel historically at home in the region rather than imported as a novelty.3
That dual life as both shell bean and storage bean is what connects the note graph here. Lacto-Fermented Fresh Cranberry Beans works with the just-shelled stage, when tenderness and sweetness are still present, while Cranberry Bean and Sunchoke Miso treats the bean as a dense, earthy substrate for a longer ferment.
