  • 100g light toasted rye
  • 800g water
  • 200g jun starter
  • 8% honey

Notes and Observations

  • Tasting Notes: The flavor profile is reminiscent of a pleasant amazake-like taste or a sour rice wine. It is generally pleasant, though currently a bit too sour and somewhat too funky.

Future Adjustments

  • The funkiness and acidity could be mellowed out in the next trial by reducing the amount of koji used in the initial mix.
