Rye has a darker, earthier flavor than wheat and a gentle bitter edge. It is often associated with bread and whiskey, but in the Northeast it also matters as a cover crop, a milling grain, and a base for drinks like Toasted Rye Tea.1

Rye seems to have started as a weed moving through early wheat and barley fields in southwest Asia before becoming a crop in its own right. It proved especially useful in cool, poor, acidic ground, which helps explain why it became such a durable bread grain across northern Europe and why it still fits northern grain systems so well.23 University of Maine’s winter rye trial report describes the crop as a long-standing Maine cover crop and notes that regional markets now include seed, flour, and beverage uses in addition to agronomic ones.1

In the kitchen, rye behaves differently from wheat because its structure leans less on a stretchy gluten network and more on water-holding arabinoxylans, the carbohydrates older food writing often calls pentosans.24 Those gums help rye doughs stay cohesive, help sourdough-style rye loaves keep moisture for a long time, and make pure rye breads rely on acidity and long baking rather than on big airy lift.4 That same grain can also move in a very different direction once it is toasted, malted, or fermented, which is why it appears here in Rye Amazake, Rye Koji “Coffee”, and Toasted Rye Tea.
