Helianthus annuus
Sunflower seed comes from a flower head that is really a packed inflorescence of many florets. The big yellow rays at the edge are there for show, while the fertile disk florets in the center are the ones that set the striped or black “seeds” we eat.1 In New England the plant is familiar in gardens and roadside edges, and in the broader Northeast it is as much a historic North American food as it is a decorative flower.2
Those “seeds” are botanically achenes, complete fruits with the true seed enclosed inside a hull.13 That structure matters in the kitchen: confectionery types are bred for large kernels and hulls that crack cleanly, while oilseed types are smaller and denser. Sunflower was used as food in North America long before modern oilseed breeding, and by the nineteenth century Russia had already turned it into a major commercial oil crop.1
The kernel is an unusually rich seed, carrying substantial oil, useful protein, and a high proportion of linoleic acid in conventional types, with high-oleic breeding developed later for a different fat profile.1 That richness helps explain why sunflower seed works equally well as snack, paste, milk, or pressed oil: it is closer to a compact energy store than to the dry cereal grains it sometimes stands beside in a pantry.
