Maple syrup is concentrated maple sap, most often from sugar maple (Acer saccharum) and sometimes red maple (Acer rubrum). Maine law defines finished syrup as 66–69% soluble solids by weight (degrees Brix).1

Maple sap products were an essential part of many Native American communities long before European colonization. In Maine, sap flow depends on late-winter freeze–thaw cycles; starch stored in the tree is converted largely to sucrose as the wood warms.2

“Sugar sand” is the common maple term for the pale mineral sediment that can form during syrup making. It is mostly calcium malate, not actual sand.3

Fresh sap is only faintly sweet. Maple’s characteristic flavor develops as sucrose, amino acids, and other dissolved material concentrate and react during evaporation.2

Finished syrup remains mostly sucrose and water, with smaller amounts of glucose, fructose, organic acids, minerals, and amino acids. Its aroma is a mixture rather than a single “maple” molecule: vanillin supplies one vanilla-like note, while caramelization and reactions between sugars and amino acids build darker flavors as boiling becomes longer or hotter.4 Late-season sap begins with less sugar and needs more boiling, which helps explain why it tends to produce darker, stronger syrup.4
