Oyster mushrooms are wood-decomposing fungi that form layered, shelf-like clusters. The “oyster” name refers to the cap shape, not to a marine relationship, and in practice it covers several closely related Pleurotus species rather than a single mushroom.1

The visible mushroom is only the fruiting body. Most of the organism is a network of hyphae moving through wood or some other fibrous substrate, digesting material that many crops cannot use directly.2 That is part of what makes oyster mushrooms so attractive in this notebook: they are food made by converting low-value cellulose into something tender, savory, and fast to cook. Older cultivation literature describes them plainly as a way of turning lignocellulosic waste into human food, and Cornell’s Northeast cultivation guide still treats them as one of the most accessible commercial mushroom crops for small farms.23

In the Northeast, oysters are especially tied to straw culture. Cornell notes that growing them on straw is often the second mushroom method growers try after shiitake logs because the mycelium colonizes the low-nutrient, high-carbon substrate quickly, and the crop cycle can run only about five weeks from inoculation to harvest.3 That speed, plus the mushroom’s broad cap surface and thin flesh, helps explain why oyster mushrooms read as delicate even when their flavor is deeply savory.

Fresh oyster mushrooms are mostly water, so they wilt and shrink quickly in a pan and also need gentle handling after harvest.4 They can be dried, but their best texture usually comes from cooking them while still young and flexible, when the caps are silky and the stems have not toughened. That makes them a useful reference point for preparations that want chew and umami without the denser structure of shiitakes or the aggressive texture of firmer polypores.
