Shiitake is a cultivated wood-decaying mushroom valued less for delicacy than for how much savory depth it can generate in a small amount. It fits the Northeast cleanly because log-grown shiitake has become an established specialty crop for northeastern growers, especially on hardwood bolts, and because the mushroom’s drying, roasting, and fermenting behavior makes it more useful in this notebook than a generic supermarket mushroom.12

McGee notes that the Chinese were already raising shiitake on oak logs in the thirteenth century, which matters here because that log-grown form is still the model for much Northeastern production.2 The Cornell-UVM shiitake manual was written specifically for the northeastern United States and treats local tree species, laying yards, and markets as a distinct regional system rather than a copy of southern production.1 Penn State’s mushroom production summary groups shiitake with oyster and other specialty mushrooms in the commercial category of log-grown specialty growers, a good fit for the region’s mixed woodland-and-farm economy, where log-grown mushrooms can sit comfortably beside larger indoor operations.3

Food-wise, shiitake matters because it carries both free glutamates and the nucleotide GMP, one of the compounds that deepens umami when it meets glutamate-rich foods.4 McGee also points out that the mushroom’s characteristic aroma comes from sulfur chemistry, especially lenthionine, and that drying and rehydrating intensify those savory notes rather than flattening them.4 Vaughan and Geissler list it among the commercially important edible fungi and note that mushrooms contribute both flavor and texture to a meal, which is exactly why shiitake holds onto its place so stubbornly.5 That combination of clear flavor and springy, persistent texture is what makes shiitake so helpful in experiments aimed at condiments, garums, or fish-sauce-like preparations: it brings a recognizably fungal note, not just bulk.25

That is exactly how it shows up here. Lacto-Fermented Shiitake uses the mushroom as a preservation project and a way to capture savory brine, while Oyster Mushroom already treats shiitake as the denser, more umami-heavy comparison point.
