Soybean is a legume grown for protein- and oil-rich seeds. Its food role is unusually broad: the same mature bean can become oil, flour, milk, curd, meal, or a fermentation substrate.1

In the Northeast it is no longer only a commodity-field crop from somewhere else. Cornell notes that soybean acreage in New York has continued to expand and that New York-grown soybeans tend to run somewhat higher in protein and lower in oil than Corn Belt beans, a difference that matters when the beans are headed toward food rather than just crushing.2

Edamame is an immature green soybean harvested while the seed is still tender. Dry soybeans are the mature form used for oil, flour, soy milk, tofu, and fermented foods. Okara is the pulp left when ground beans are filtered during soy-milk production.1

Fresh soybeans taste notably different from dry ones because they are harvested before full maturity, when they are greener, sweeter, and less assertively beany.3 That familiar mature-soy aroma comes from an awkward pairing inside the seed: a lot of polyunsaturated oil and very active enzymes ready to break that oil into small volatile fragments once the bean is soaked, ground, or otherwise damaged.3 Fast heating is one of the classic ways to blunt that flavor before it gets too loud.

Most soybean protein is not gluten-like storage protein at all but salt-soluble globulin, with the major fractions known as conglycinin and glycinin.4 That helps explain why soy behaves so differently from wheat in doughs and why its more interesting transformations here often come through curdling, emulsifying, or fermentation instead of through kneading. In this notebook, soybean is less a single flavor than a platform ingredient that keeps changing character as it moves from bean to milk to tofu to koji, miso, or tempeh.
